Potato Poppers

Mmm! Try these Potato Poppers for
yourself, your next party, or your family. They're fun, yummy
and easy! Made with mashed potatos, rice, Parmesan cheese and
other common and easy-to-find ingredients.
½ onion, chopped
1 tablespoon tomato paste
1 tablespoon butter
½ teaspoon salt
½ cup mashed potato
½ cup whole grain bread crumbs
1 cup cooked rice
¼ cup grated Parmesan cheese
Preheat the oven to 350°. Sauté
onion in butter. Combine all ingredients and form into 1½-inch
balls. Bake until delicately brown. Can freeze and reheat in microwave.
Makes 12.
